Toast a cup of steel cut oats in a tablespoon or two of butter until they smell good and nutty and lightly browned; meanwhile, bring 3 cups water and 1 cup milk to simmer, then combine the two and simmer for around 30 minutes, until most of the liquid is absorbed.
